Mashed Sweet Potatoes

2-3 large sweet potatoes, diced
3/4 c milk
1 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1 tbsp maple syrup or agave

So, you can cook the potatoes two ways: boil them or bake them. I like the roasted flavor that comes from baking them, but they get softer when you’re boiling. Either way, once they’re cooked, add the rest of the ingredients and mash, either with a potato masher, a whisk, (a surprisingly useful tool!) or food processor. You can totally make this with a can of pumpkin for a super-fast side, too!
