Chickpea Fritters

1 cup flour
1 egg
1/2 c milk
pinch of salt
1.5 tsp baking powder (soda does NOT work! They turn out flat and horrible!)
1 can chickpeas
2-3 scallions

Mix the first five ingredients until well combined. Add the chickpeas and scallions and mix. Over medium heat, warm 1 inch of oil until a bit of batter starts to cook. Pour 1/4 c-sized fritters and cook for 3-4 minutes per side, or until golden brown. Drain over paper towels, as these will be super oily.

I know what you’re thinking. Man, Lucie, you put way more green onions in those than you said you did, unless . . . no, that’s not Dead Soap Herb, is it?? Well, dear reader, it is. The people I cook for aren’t mutants, so they like cilantro. I definitely leave it out when I make it.
