Baba Ghanoush

1 eggplant
1-2 cloves garlic
2 tbsp tahini
1 tsp coriander
1 tsp cumin
salt to taste

Slice the eggplant in half, brush with oil, and bake in the oven at 375 for about 45 minutes or until browned and softened. Let it cool, then scoop out the white flesh. Throw that and the rest of the ingredients into a food processor and blend thoroughly. So easy, and delicious with pita!
